Flor de Guía Cheese, granted Protected Designation of Origin in 2007, is a traditional Gran Canaria cheese made mainly from Canarian sheep milk and coagulated with thistle rennet. Its origins date back to the 16th century, linked to transhumance and the life of shepherds in the northwest of the island. It has a cylindrical shape, 15–30 cm in diameter, and weighs between 0.5 and 5 kg. The cheese stands out for its distinctive flavor and aroma, shaped by the animals' varied diet and artisanal production. Its making and aging take place in Gáldar, Santa María de Guía, and Moya, ensuring authenticity and quality.
